Monkfish from the Oven

Ingredients, serves 4
- 1 kg Monkfish
- 3 potatoes
- 2 red peppers
- 1 onion
- 8 cloves garlic
- Fresh rosemary and oregano
- Olive oil
- Salt, pepper
Preparation
Chop onions finely. Heat oil in an oven dish and saute onions. Peel potatoes and cut slices, cut peppers in 2 cm pieces, peel garlic, roast everything shortly in the dish.
Remove the skin from the fish, cut away the fins, remove what is not so beautiful and see that there is only white meat left.
Cut small round slices (medaillons), sprinkle with ground pepper and salt and fry in a pan in hot oil on both sides.
Place fish on the vegetables in the dish, sprinkle with herbs, pour 1/8 l white wine over the fish and let roast in the preheated oven at about 220°C for 20 minutes.
