Leekrice with Shrimps Sauce

Ingredients, serves 4
- 250 g basmati rice
- 2 leeks
- 1/2 l clear soup
- 1/2 onion
- 250 g frozen shrimps, defrosted
- 1/2 cup sour cream
- 2 tablespoons chopped parsley
- oil, pepper, salt
Preparation
Use only the white or light green parts of the leek, cut thin rings. Heat oil in a pot, saute the leekrings. Add basmati rice, stir and add clear soup. Cover with a lid and let stew at low heat.
Cut onions finely, saute in olive oil, add shrimps, blend with sour cream, add parsley. Season with salt, pepper, let stew for a while, (don´t allow the sauce to boil).
